In a separate bowl, mix the diced apples with the unsweetened applesauce.
In a large mixing bowl, combine the cottage cheese, rolled oats, honey or maple syrup, eggs, cinnamon, vanilla extract, salt, and baking powder. Stir until well combined.
Grease an 8x8-inch baking dish and pour the cottage cheese mixture into the prepared dish, spreading it evenly.
Bake for 30-35 minutes, or until the top is golden brown and the edges are set. Let it cool for about 10 minutes before slicing into squares.
