Ingredients
  

Cottage Cheese
  • 2 cups cottage cheese full-fat or low-fat
  • 1 cup rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup diced apples about 1 medium apple
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup chopped walnuts or pecans optional
  • cooking spray or butter for greasing

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a separate bowl, mix the diced apples with the unsweetened applesauce.
  3. In a large mixing bowl, combine the cottage cheese, rolled oats, honey or maple syrup, eggs, cinnamon, vanilla extract, salt, and baking powder. Stir until well combined.
  4. Grease an 8x8-inch baking dish and pour the cottage cheese mixture into the prepared dish, spreading it evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and the edges are set. Let it cool for about 10 minutes before slicing into squares.
