Ingredients
  

Cottage Cheese Mixture
  • 2 cups cottage cheese Fresh for best texture
  • 1 cup rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup diced apples About 1 medium apple
  • 1/4 cup honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup chopped walnuts or pecans Optional
  • 1/4 cup raisins or dried cranberries Optional

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, unsweetened applesauce, diced apples, honey or maple syrup, ground cinnamon, vanilla extract, and salt. Mix until well combined.
  3. In a separate bowl, whisk the eggs and then add them to the cottage cheese mixture. Stir until fully combined. Fold in any optional nuts or dried fruits.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and the edges are set. Allow to cool for about 10 minutes before slicing into squares.
