- Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
- In a large mixing bowl, combine the cottage cheese, rolled oats, unsweetened applesauce, diced apples, honey or maple syrup, ground cinnamon, vanilla extract, and salt. Mix until well combined.
- In a separate bowl, whisk the eggs and then add them to the cottage cheese mixture. Stir until fully combined. Fold in any optional nuts or dried fruits.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 30-35 minutes, or until the top is golden brown and the edges are set. Allow to cool for about 10 minutes before slicing into squares.
