Baked Egg Boats
  • 2 large French rolls or hoagie buns
  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • to taste fresh parsley, chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Slice the French rolls or hoagie buns in half lengthwise and scoop out some of the bread from the center.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped spinach for 2-3 minutes until wilted.
  4. In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper. Fold in the sautéed spinach and shredded cheddar cheese.
  5. Drizzle olive oil inside each bread boat and pour the egg mixture evenly into each roll.
  6. Bake in the preheated oven for 20-25 minutes until the eggs are set and the tops are golden.
