Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil in a medium oven-safe skillet over medium heat. Add 1 cup of chopped fresh spinach and sauté for 2-3 minutes until wilted.
  3. Add 1 cup of halved cherry tomatoes to the skillet and cook for an additional 2 minutes, stirring occasionally. Push the spinach and tomatoes to the side and add 8 ounces of crumbled feta cheese in the center.
  4. Carefully crack 4 large eggs over the feta cheese. Season with salt, pepper, 1 teaspoon of dried oregano, and red pepper flakes if desired. Transfer the skillet to the preheated oven and bake for 15-20 minutes.
  5. Remove from the oven, let cool for a minute, and garnish with fresh basil or parsley before serving.
