Ingredients

Base Ingredients
  • 2 cups rolled oats These are the base of your overnight oats. Rolled oats absorb the liquid well, creating a creamy texture.
  • 2 cups unsweetened almond milk You can use any milk of your choice, but almond milk keeps it light and dairy-free.
  • 2 ripe bananas, mashed The star ingredient! Ripe bananas add natural sweetness and a rich banana flavor.
  • 1/4 cup Greek yogurt This adds creaminess and a boost of protein, making your oats more filling.
  • 1/4 cup honey or maple syrup Use either sweetener to enhance the flavor.
  • 1 teaspoon vanilla extract This adds a warm, sweet aroma that complements the bananas beautifully.
  • 1/2 teaspoon ground cinnamon A pinch of cinnamon brings warmth and depth to the flavor profile.
  • 1/4 teaspoon salt A little salt balances the sweetness and enhances the overall taste.
  • 1/2 cup sliced bananas (for topping) Fresh banana slices on top add a lovely presentation and extra flavor.
  • 1/4 cup crushed graham crackers (for topping) These mimic the crust of a banana cream pie, adding a delightful crunch.
  • 1/4 cup whipped cream (optional, for topping) For those who want to indulge, a dollop of whipped cream makes it extra special.

Equipment

  • mixing bowl
  • jars or containers with lids

Method

  1. Gather your ingredients: rolled oats, almond milk, ripe bananas, Greek yogurt, honey or maple syrup, vanilla extract, ground cinnamon, and salt. Don’t forget your toppings: sliced bananas, crushed graham crackers, and whipped cream if you like!
  2. In a large mixing bowl, combine the rolled oats and almond milk. Then, add the mashed bananas, Greek yogurt, and your choice of sweetener. Next, pour in the vanilla extract, sprinkle the ground cinnamon, and add the salt. Stir everything together until it’s well mixed.
  3. Once your base is ready, it’s time to enhance the flavor. Make sure to mix thoroughly so that every bite is packed with flavor!
  4. Divide the oat mixture evenly into four jars or containers with lids. Layer the top with sliced bananas and a sprinkle of crushed graham crackers. If you’re feeling indulgent, add a dollop of whipped cream on top.
  5. Seal the jars tightly and place them in the refrigerator. Let them chill overnight, or for at least 4 hours.
