Base Ingredients
  • 1 cup rolled oats
  • 2 pieces ripe bananas
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • a pinch salt
  • as needed cooking oil or butter for the pan

Method
 

  1. Gather all your ingredients including rolled oats, ripe bananas, milk, eggs, baking powder, vanilla extract, cinnamon, salt, and cooking oil or butter.
  2. In a mixing bowl, add the rolled oats and pour in the milk. Let this mixture sit for about 5 minutes.
  3. In another bowl, mash the ripe bananas until smooth. Add the eggs, vanilla extract, and a pinch of salt to the mashed bananas and mix well.
  4. Combine the oatmeal mixture with the banana mixture. Stir in the baking powder and cinnamon if using. Mix until just combined.
  5. Heat a non-stick skillet or griddle over medium heat. Add a little cooking oil or butter. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
