Method
- Gather all your ingredients including rolled oats, ripe bananas, milk, eggs, baking powder, vanilla extract, cinnamon, salt, and cooking oil or butter.
- In a mixing bowl, add the rolled oats and pour in the milk. Let this mixture sit for about 5 minutes.
- In another bowl, mash the ripe bananas until smooth. Add the eggs, vanilla extract, and a pinch of salt to the mashed bananas and mix well.
- Combine the oatmeal mixture with the banana mixture. Stir in the baking powder and cinnamon if using. Mix until just combined.
- Heat a non-stick skillet or griddle over medium heat. Add a little cooking oil or butter. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
