- Prepare the chicken by shredding it into bite-sized pieces.
- In a large mixing bowl, combine shredded chicken with BBQ sauce, cauliflower rice, sautéed bell peppers, red onion, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
- Transfer the mixture to a greased 9x13 inch baking dish and spread evenly. Sprinkle shredded cheddar cheese on top.
- Preheat oven to 350°F. Bake for 25-30 minutes until cheese is melted and bubbly. Let cool for 5 minutes before serving.
