- Prepare the chicken by shredding rotisserie chicken or cooking your own chicken breasts until fully cooked and shredding them.
- Mix the BBQ sauce with the shredded chicken in a bowl until well coated.
- Assemble the flatbreads by brushing them with olive oil, seasoning with salt and pepper, and spreading the BBQ chicken mixture evenly on top. Add mozzarella cheese and red onion.
- Bake in a preheated oven at 400°F for 10-12 minutes until the cheese is melted and bubbly.
- Let cool for a minute, then sprinkle with fresh cilantro before slicing and serving.
