Method
 

  1. Prepare the chicken by shredding rotisserie chicken or cooking your own chicken breasts until fully cooked and shredding them.
  2. Mix the BBQ sauce with the shredded chicken in a bowl until well coated.
  3. Assemble the flatbreads by brushing them with olive oil, seasoning with salt and pepper, and spreading the BBQ chicken mixture evenly on top. Add mozzarella cheese and red onion.
  4. Bake in a preheated oven at 400°F for 10-12 minutes until the cheese is melted and bubbly.
  5. Let cool for a minute, then sprinkle with fresh cilantro before slicing and serving.
