Preheat the oven to 350°F.
In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat and season with salt, black pepper, paprika, onion powder, and garlic powder.
In a separate bowl, mix mayonnaise, ketchup, and yellow mustard to create the special sauce.
In a large mixing bowl, combine cooked pasta, beef mixture, chopped pickles, and half of the shredded cheddar cheese. Add the special sauce and stir until well combined.
Transfer the mixture to a greased 9x13 inch baking dish, spread evenly, and sprinkle the remaining cheese on top. Bake for 25-30 minutes until cheese is bubbly and golden brown. Let cool for 5 minutes before serving.
