Cottage Cheese
  • 2 cups cottage cheese
  • 1 cup rolled oats
  • 1 cup blueberries fresh or frozen
  • 0.5 cup milk
  • 0.25 cup honey or maple syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 1 tablespoon butter for greasing the baking dish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x9-inch baking dish with 1 tablespoon of butter.
  3. In a large mixing bowl, combine all your ingredients: cottage cheese, rolled oats, blueberries, milk, honey (or maple syrup), eggs, vanilla extract, baking powder, cinnamon, and salt. Stir until well mixed.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 30-35 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Allow to cool for 5-10 minutes before slicing and serving.
