Chicken
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup low-fat shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1/2 cup chopped green onions
  • 4 large whole wheat tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

Method
 

  1. Prepare the chicken by boiling or baking until fully cooked, then shred it into small pieces.
  2. In a large mixing bowl, combine the shredded chicken with buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Stir in Greek yogurt, half of the shredded cheddar cheese, and chopped green onions until fully combined.
  4. Lay out the tortillas, divide the chicken mixture among them, and sprinkle remaining cheddar cheese on top.
  5. Fold in the sides of each tortilla and roll them up tightly. Place seam-side down on a baking sheet coated with cooking spray.
  6. Bake in a preheated oven at 375°F for 20-25 minutes until golden brown and crispy.
