Chicken
  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded mozzarella cheese
  • 0.5 cup cream cheese, softened
  • 0.5 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Method
 

  1. Prepare the chicken by shredding it into bite-sized pieces.
  2. Heat olive oil in a skillet over medium heat and sauté mushrooms for 5 minutes until soft. Add spinach and cook for an additional 2-3 minutes until wilted.
  3. In a large mixing bowl, combine shredded chicken, sautéed mushrooms, spinach, cream cheese, chicken broth, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Stir until well combined.
  4. Transfer the mixture to a greased 9x9-inch baking dish, spread evenly, and top with shredded mozzarella cheese. Bake in a preheated oven at 375°F for 25-30 minutes until cheese is bubbly and golden brown.
