  • 3 medium zucchinis, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

  • 1 tablespoon olive oil
  • 1/4 cup fresh basil, chopped (optional for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by shredding it into bite-sized pieces if not already done.
  3. Wash the zucchinis and slice them into rounds, about 1/4 inch thick.
  4. In a large mixing bowl, combine the shredded chicken, sliced zucchinis, halved cherry tomatoes, mozzarella cheese, Parmesan cheese, and softened cream cheese. Add garlic powder, Italian seasoning, salt, and pepper. Mix well.
  5. Drizzle olive oil into a 9x13 inch baking dish and spread it evenly. Pour the chicken and zucchini mixture into the dish and spread it out evenly.
  6. Bake in the preheated oven for 25-30 minutes until the zucchini is tender and the cheese is bubbly and golden brown. Let it cool for about 5 minutes before serving.
