- Preheat your oven to 375°F (190°C).
- Prepare the chicken by shredding it into bite-sized pieces if not already done.
- Wash the zucchinis and slice them into rounds, about 1/4 inch thick.
- In a large mixing bowl, combine the shredded chicken, sliced zucchinis, halved cherry tomatoes, mozzarella cheese, Parmesan cheese, and softened cream cheese. Add garlic powder, Italian seasoning, salt, and pepper. Mix well.
- Drizzle olive oil into a 9x13 inch baking dish and spread it evenly. Pour the chicken and zucchini mixture into the dish and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes until the zucchini is tender and the cheese is bubbly and golden brown. Let it cool for about 5 minutes before serving.
