- Heat a large skillet over medium heat. Add olive oil and warm up. Add ground beef, breaking it apart as it cooks. Brown for 5-7 minutes until fully cooked.
- Add chopped onion to the skillet. Cook for another 3-4 minutes until soft and translucent. Season with salt and pepper.
- Pour in enchilada sauce and stir to coat. Let simmer for 2-3 minutes.
- Add corn tortilla strips to the skillet, folding them into the mixture. Cook for another 2-3 minutes.
- Sprinkle shredded cheese over the top. Cover and let simmer for 5 minutes until cheese is melted.
- Remove from heat and garnish with fresh cilantro and other toppings. Serve hot.
