  • 2 cups enchilada sauce Provides classic enchilada taste.
  • 4-6 pieces corn tortillas Cut into strips for the base.
  • 2 cups shredded cheese A mix of cheddar and Monterey Jack.
  • 1 tablespoon olive oil For browning the beef and onions.
  • salt and pepper To taste.

Method
 

  1. Heat a large skillet over medium heat. Add olive oil and warm up. Add ground beef, breaking it apart as it cooks. Brown for 5-7 minutes until fully cooked.
  2. Add chopped onion to the skillet. Cook for another 3-4 minutes until soft and translucent. Season with salt and pepper.
  3. Pour in enchilada sauce and stir to coat. Let simmer for 2-3 minutes.
  4. Add corn tortilla strips to the skillet, folding them into the mixture. Cook for another 2-3 minutes.
  5. Sprinkle shredded cheese over the top. Cover and let simmer for 5 minutes until cheese is melted.
  6. Remove from heat and garnish with fresh cilantro and other toppings. Serve hot.
