Method
 

  1. Prep all ingredients by chopping the onion, mincing the garlic, and measuring out the other components.
  2. Heat olive oil in a large skillet over medium heat. Sauté the onion for 3-4 minutes until soft, then add garlic and ground chicken. Cook for 6-8 minutes until chicken is browned.
  3. In a large mixing bowl, combine the cooked chicken mixture with taco seasoning, black beans, corn, diced tomatoes, and cooked rice. Layer half in a greased baking dish, sprinkle with 1 cup cheese, add remaining mixture, pour salsa, and top with crushed chips and remaining cheese.
  4. Preheat oven to 350°F. Bake casserole for 25-30 minutes until cheese is bubbly and golden. Let cool for 5 minutes before serving.
