Ingredients
  

Mashed Potatoes
  • 2 cups mashed potatoes (prepared and cooled)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chopped green onions (optional)
  • as needed for frying oil (vegetable or canola)

Method
 

  1. Prepare mashed potatoes by boiling peeled and chopped potatoes until tender, then mash and cool.
  2. Mix cooled mashed potatoes with cheddar cheese, Parmesan cheese, flour, eggs, garlic powder, onion powder, salt, black pepper, and paprika until well combined.
  3. Shape the mixture into small balls or puffs, about 1-2 inches in diameter.
  4. Bake at 400°F for 20-25 minutes or fry for 3-4 minutes until golden brown.
