Prepare all your ingredients by slicing the chicken, mincing the garlic, chopping the green onions, and cooking the rice noodles according to package instructions.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook for about 5-7 minutes until browned and cooked through.
Add the minced garlic and sauté for about 30 seconds. Push the chicken and garlic to one side and pour in the beaten eggs. Scramble the eggs until fully cooked.
Add the cooked rice noodles, bean sprouts, green onions, fish sauce, soy sauce, brown sugar, lime juice, and red pepper flakes. Stir everything together for about 2-3 minutes.
Remove from heat and stir in the crushed peanuts and fresh cilantro. Serve with lime wedges on the side.
