  • 1 cup canned chickpeas drained and rinsed
  • 1 cup rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

  1. Gather all ingredients including canned chickpeas, rolled oats, almond butter, honey, chocolate chips, vanilla extract, cinnamon, and salt.
  2. Prepare the chickpeas by draining and rinsing them under cold water.
  3. Mix the chickpeas, rolled oats, almond butter, honey, vanilla extract, cinnamon, and salt in a food processor until smooth.
  4. Fold in chocolate chips if using, then pour the mixture into a prepared baking dish and spread evenly.
  5. Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until edges are golden brown.
  6. Let the bars cool for 10 minutes before transferring to a wire rack to cool completely, then cut into squares or rectangles.
