  • 4 large eggs
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey (optional)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Gather all your ingredients.
  3. In a large mixing bowl, mix the cottage cheese and eggs until smooth.
  4. In a separate bowl, mix the almond flour, coconut flour, baking powder, and salt. Gradually add to the wet ingredients and fold in the blueberries, vanilla extract, and honey if using.
  5. Spoon the batter onto a prepared baking sheet, forming about 8 equal mounds. Bake for 25-30 minutes until golden brown.
  6. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
