- Preheat your oven to 350°F (175°C).
- Gather all your ingredients.
- In a large mixing bowl, mix the cottage cheese and eggs until smooth.
- In a separate bowl, mix the almond flour, coconut flour, baking powder, and salt. Gradually add to the wet ingredients and fold in the blueberries, vanilla extract, and honey if using.
- Spoon the batter onto a prepared baking sheet, forming about 8 equal mounds. Bake for 25-30 minutes until golden brown.
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
