Prepare the chicken by cooking it until fully cooked, then shred it into bite-sized pieces.
In a large mixing bowl, combine the shredded chicken with cottage cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.
Spread half of the marinara sauce on the bottom of a baking dish. Spoon the chicken and cottage cheese mixture over the sauce, then pour the remaining marinara sauce on top.
Sprinkle shredded mozzarella and grated Parmesan cheese on top, drizzle with olive oil, and bake in a preheated oven at 375°F for 25-30 minutes until cheese is bubbly and golden brown.
Let cool for a few minutes before serving.
