Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese and eggs. Whisk until smooth.
  3. Stir in the shredded cheddar cheese, diced bell peppers, chopped green onions, garlic powder, salt, black pepper, and paprika (if using). Mix until well incorporated.
  4. Grease a muffin tin and pour the egg mixture into each cup, filling about 3/4 full.
  5. Bake for 20-25 minutes, or until set and lightly golden. Let cool before removing.
