  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers any color
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Cooking spray or oil for greasing

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, crack open the six large eggs and whisk until well combined.
  3. Add the cottage cheese, shredded cheddar cheese, diced bell peppers, chopped green onions, garlic powder, salt, black pepper, and paprika to the egg mixture. Stir until well mixed.
  4. Grease a muffin tin with cooking spray or oil. Pour the egg mixture into each muffin cup, filling them about 3/4 full.
  5. Bake the egg bites for 20-25 minutes until set and lightly golden on top.
  6. Let the muffin tin cool for a few minutes before removing the egg bites.
