- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, crack open the six large eggs and whisk until well combined.
- Add the cottage cheese, shredded cheddar cheese, diced bell peppers, chopped green onions, garlic powder, salt, black pepper, and paprika to the egg mixture. Stir until well mixed.
- Grease a muffin tin with cooking spray or oil. Pour the egg mixture into each muffin cup, filling them about 3/4 full.
- Bake the egg bites for 20-25 minutes until set and lightly golden on top.
- Let the muffin tin cool for a few minutes before removing the egg bites.
