  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh herbs (optional) like parsley or chives, chopped

Method
 

  1. Gather all your ingredients and ensure they are ready for use.
  2. In a large mixing bowl, combine the drained cottage cheese and the egg. Mix until well combined.
  3. Add the flour, baking powder, salt, and garlic powder to the mixture. Stir until a dough forms.
  4. Lightly flour a clean surface and knead the dough gently for about 1 minute. Divide into four equal portions and shape each into a flat round about 1/2 inch thick.
  5. Place the flatbreads on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with fresh herbs if desired.
  6. Preheat your oven to 400°F (200°C) and bake the flatbreads for 15-20 minutes until golden brown.
  7. Remove from the oven and let cool slightly before serving.
