- Gather all your ingredients and ensure they are ready for use.
- In a large mixing bowl, combine the drained cottage cheese and the egg. Mix until well combined.
- Add the flour, baking powder, salt, and garlic powder to the mixture. Stir until a dough forms.
- Lightly flour a clean surface and knead the dough gently for about 1 minute. Divide into four equal portions and shape each into a flat round about 1/2 inch thick.
- Place the flatbreads on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with fresh herbs if desired.
- Preheat your oven to 400°F (200°C) and bake the flatbreads for 15-20 minutes until golden brown.
- Remove from the oven and let cool slightly before serving.
