- Mix cottage cheese and egg in a bowl until smooth.
- Combine flour, baking powder, salt, and optional ingredients in a separate bowl.
- Gradually add dry mixture to the wet mixture and stir until a dough forms.
- Knead the dough for about 1 minute until smooth and elastic.
- Let the dough rest for 10 minutes covered.
- Divide the dough into 4 portions and shape into flat rounds.
- Heat a skillet over medium heat, add olive oil, and cook each flatbread for 3-4 minutes on each side until golden brown.
- Remove from skillet and let cool slightly on a wire rack.
