Method
 

  1. Mix cottage cheese and egg in a bowl until smooth.
  2. Combine flour, baking powder, salt, and optional ingredients in a separate bowl.
  3. Gradually add dry mixture to the wet mixture and stir until a dough forms.
  4. Knead the dough for about 1 minute until smooth and elastic.
  5. Let the dough rest for 10 minutes covered.
  6. Divide the dough into 4 portions and shape into flat rounds.
  7. Heat a skillet over medium heat, add olive oil, and cook each flatbread for 3-4 minutes on each side until golden brown.
  8. Remove from skillet and let cool slightly on a wire rack.
