- Combine cottage cheese, flour, baking powder, salt, egg, garlic powder, and Italian seasoning in a mixing bowl. Mix until a soft dough forms. Transfer to a parchment-lined baking sheet and shape into a flat, round base about 1/2 inch thick.
- Bake the flatbread base in a preheated oven for 10-12 minutes until golden brown. Let cool slightly.
- Spread pizza sauce over the flatbread, then sprinkle with mozzarella cheese and desired toppings. Bake for an additional 8-10 minutes until cheese is melted and bubbly.
