Gather all your ingredients.

In a separate bowl, mix the rolled oats, baking powder, and salt.
Pour the dry mixture into the bowl with the wet ingredients. Add vanilla extract and honey or maple syrup if using. Stir gently until just combined.
Heat a non-stick skillet over medium heat and add butter or oil. Pour 1/4 cup of batter for each pancake. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
