Ingredients
  

Cottage cheese
  • 1 cup Cottage cheese preferably low-fat or full-fat
  • 4 ounces Smoked salmon sliced into bite-sized pieces
  • 1/2 cup Cherry tomatoes halved
  • 1/2 cucumber Cucumber diced
  • 1/4 red onion Red onion finely chopped
  • 1/2 bell pepper Bell pepper diced, any color
  • 2 tablespoons Fresh dill chopped
  • 2 tablespoons Fresh chives chopped
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • Salt and pepper to taste

Method
 

  1. Gather all ingredients.
  2. In a large mixing bowl, add the cottage cheese and mix until smooth.
  3. Add the cherry tomatoes, cucumber, red onion, and bell pepper. Stir gently to combine.
  4. Fold in the smoked salmon gently.
  5. Drizzle olive oil and lemon juice over the salad, and season with salt and pepper. Mix well.
  6. Serve immediately or chill before serving.
