  • 1 cup cottage cheese
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh chives (optional)

Method
 

  1. Gather your ingredients: eggs, cottage cheese, butter, salt, black pepper, and chives if using.
  2. In a medium bowl, crack the eggs and whisk until fully combined. Add a pinch of salt and black pepper.
  3. Add the cottage cheese to the whisked eggs and gently mix without overmixing.
  4. Heat butter in a non-stick skillet over medium heat. Pour in the egg and cottage cheese mixture and let sit for 30 seconds.
  5. Gently stir the mixture, pushing the eggs from the edges toward the center, and cook until just set but still creamy, about 3-4 minutes.
  6. Remove from heat and sprinkle with chives if using. Serve immediately.
