- Preheat your oven to 350°F (175°C).
- Grease a 9x13-inch baking dish with cooking spray or olive oil. Chop bell peppers, onions, and spinach if using.
- In a large skillet, heat olive oil over medium heat. Add crumbled turkey sausage, diced onions, and bell peppers. Cook for 5-7 minutes until browned.
- In a large mixing bowl, whisk together eggs, cottage cheese, garlic powder, onion powder, salt, black pepper, and paprika until well combined.
- Stir the cooked sausage and vegetables into the egg and cottage cheese mixture. Pour into the prepared baking dish and sprinkle cheddar cheese on top.
- Bake in the preheated oven for 30-35 minutes until set and cheese is melted and bubbly. Let cool for a few minutes before slicing.
