Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish with cooking spray or olive oil. Chop bell peppers, onions, and spinach if using.
  3. In a large skillet, heat olive oil over medium heat. Add crumbled turkey sausage, diced onions, and bell peppers. Cook for 5-7 minutes until browned.
  4. In a large mixing bowl, whisk together eggs, cottage cheese, garlic powder, onion powder, salt, black pepper, and paprika until well combined.
  5. Stir the cooked sausage and vegetables into the egg and cottage cheese mixture. Pour into the prepared baking dish and sprinkle cheddar cheese on top.
  6. Bake in the preheated oven for 30-35 minutes until set and cheese is melted and bubbly. Let cool for a few minutes before slicing.
