Method
 

  1. Pat the salmon fillets dry and season with salt and pepper. Heat olive oil in a skillet over medium heat and cook the salmon for 4-5 minutes on each side until flaky. Remove and set aside.
  2. In the same skillet, sauté minced garlic for 30 seconds, then add halved cherry tomatoes and cook for 2-3 minutes until softened.
  3. Add fresh spinach and cook until wilted, about 1-2 minutes. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and Italian seasoning until melted and creamy.
  4. Return the salmon to the skillet, spoon the sauce over it, and cook for an additional 2-3 minutes until heated through. Garnish with fresh basil before serving.
