Wash chicken breast under cold water, pat dry, and cut into strips or cubes. Mix with olive oil, salt, pepper, garlic powder, and paprika.
Lay a tortilla flat, place seasoned chicken in the center, sprinkle mozzarella cheese, add fresh vegetables if desired, fold sides over filling, and roll tightly.
Preheat air fryer to 375°F. Lightly spray basket with cooking spray, place wraps seam-side down, and air fry for 10-12 minutes, flipping halfway through.
Remove wraps from air fryer, let cool for a minute, slice in half, and serve with dipping sauce.
