  • 2 cups romaine lettuce, chopped
  • 1 cup cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 2 hard-boiled eggs chopped
  • 1 each avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup blue cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • ¼ cup balsamic vinaigrette dressing
  • to taste salt and pepper

Method
 

  1. Wash and chop the romaine lettuce, dice the chicken, crumble the bacon, and prepare the other ingredients.
  2. Cook the chicken breast until fully cooked, about 15-20 minutes, and fry the bacon until crispy, about 5-7 minutes.
  3. In a large salad bowl, add the chopped romaine lettuce as the base, then layer the diced chicken, crumbled bacon, chopped hard-boiled eggs, diced avocado, halved cherry tomatoes, crumbled blue cheese, and sliced red onion.
  4. Prepare the balsamic vinaigrette dressing and drizzle it over the salad, then season with salt and pepper to taste.
