Baby Potatoes

Method
 

  1. Wash the baby potatoes thoroughly, cut each potato in half, and place them in a large bowl.
  2. In a separate bowl, mix garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Add grated Parmesan cheese and stir until evenly distributed.
  3. Pour olive oil over the halved potatoes and toss to coat. Sprinkle the garlic and Parmesan mixture over the potatoes and toss again until well coated.
  4. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and spread the coated potatoes in a single layer, cut side down. Bake for 25 minutes.
  5. Remove from the oven, sprinkle remaining Parmesan cheese over the top, and return to the oven for an additional 10-15 minutes until golden brown and crispy.
  6. Let the potatoes cool slightly before serving.
