Ingredients
  

Vegetables
  • 2 cups broccoli slaw mix
  • 1 cup cucumber, thinly sliced
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Prepare the broccoli slaw mix by washing and chopping if using fresh broccoli, or simply open the pre-packaged mix.
  2. Wash the cucumber and slice it thinly, then add it to the bowl with the broccoli slaw mix.
  3. In a separate bowl, mix Greek yogurt, apple cider vinegar, olive oil, and garlic powder until smooth. Season with salt and pepper.
  4. Pour the dressing over the slaw mixture and toss until well coated.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
