  • 2 cups cooked, shredded chicken
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 6 large flour tortillas
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Method
 

  1. Preheat your oven to 350°F (175°C). Gather and prep all ingredients.
  2. If you don’t have cooked chicken, boil or bake chicken breasts until fully cooked, about 20-30 minutes. Shred the chicken.
  3. In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes, cooked rice, and spices. Mix well.
  4. Spread a thin layer of salsa on the bottom of a 9x13-inch baking dish. Layer three tortillas, then half of the chicken mixture, and half of the cheese. Repeat with remaining ingredients.
  5. Pour remaining salsa over the top layer of cheese. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  6. Let the casserole cool for a few minutes before serving.
