Method
- Preheat your oven to 350°F (175°C). Gather and prep all ingredients.
- If you don’t have cooked chicken, boil or bake chicken breasts until fully cooked, about 20-30 minutes. Shred the chicken.
- In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes, cooked rice, and spices. Mix well.
- Spread a thin layer of salsa on the bottom of a 9x13-inch baking dish. Layer three tortillas, then half of the chicken mixture, and half of the cheese. Repeat with remaining ingredients.
- Pour remaining salsa over the top layer of cheese. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving.
