Gather all your ingredients measured and ready to go.
In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
In a separate bowl, mix the wet ingredients: milk, eggs, melted butter or coconut oil, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients and stir gently until just combined.
Preheat your non-stick skillet or griddle over medium heat and lightly grease it.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
Remove pancakes from the skillet and keep warm while repeating with the remaining batter. Serve warm with your favorite toppings.
