  • 2 cups cooked chicken shredded or diced, leftover rotisserie chicken works great
  • 1 cup mushrooms sliced, button or cremini mushrooms are excellent choices
  • 1 cup heavy cream for creamy consistency
  • 1 cup shredded cheddar cheese adds sharp, tangy flavor
  • 1/2 cup chicken broth keeps the casserole moist
  • 1/4 cup grated Parmesan cheese adds nutty taste and a golden crust
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme adds earthiness
  • 1 teaspoon onion powder adds sweetness and depth
  • to taste salt and pepper enhances flavors
  • 2 tablespoons olive oil for sautéing mushrooms
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Cook the chicken if not already cooked, then shred or dice it.
  3. Heat olive oil in a large skillet over medium heat. Sauté sliced mushrooms for 5 minutes until golden brown.
  4. Add minced garlic to the mushrooms and cook for an additional 1-2 minutes until fragrant.
  5. In a large mixing bowl, combine cooked chicken, sautéed mushrooms, heavy cream, chicken broth, cheddar cheese, Parmesan cheese, thyme, onion powder, salt, and pepper. Mix well.
  6. Transfer the mixture into a greased 9x13-inch baking dish and spread evenly.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown.
  8. Let cool for a few minutes, then garnish with fresh parsley before serving.
