Chicken
  • 2 large boneless, skinless chicken breasts about 1 pound total
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs preferably Italian seasoned
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons olive oil for frying the chicken
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)
  • 1/4 cup chopped fresh parsley (for garnish)

Method
 

  1. Prepare the chicken by rinsing under cold water, patting dry, and seasoning with salt and black pepper.
  2. Set up a breading station with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese.
  3. Bread the chicken by dredging in flour, dipping in eggs, and coating with breadcrumbs.
  4. Heat olive oil in a skillet and fry the chicken for 4-5 minutes on each side until golden brown, then transfer to the oven for 10 minutes.
  5. Prepare the garlic cream sauce by sautéing minced garlic, adding heavy cream and herbs, and simmering for 3-4 minutes.
  6. Drizzle the garlic cream sauce over the chicken and garnish with parsley before serving.
