- Heat olive oil in a large skillet over medium heat. Add ground chicken and cook for 5-7 minutes until no longer pink, stirring occasionally.
- Add garlic powder, onion powder, oregano, paprika, salt, and pepper. Stir and cook for an additional 2-3 minutes.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, and baby spinach. Add the cooked chicken and mix well.
- Drizzle with lemon juice, toss gently, and top with feta cheese and olives. Garnish with parsley if desired.
