Base Ingredients
  • 2 cups cooked brown rice
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ¼ cup Kalamata olives, pitted and sliced

Method
 

  1. Cook the brown rice according to package instructions and set aside.
  2. Heat olive oil in a skillet over medium heat, add ground turkey, and cook for 5-7 minutes until browned.
  3. Add garlic powder, onion powder, oregano, salt, and black pepper to the turkey, stir, and cook for an additional 2 minutes.
  4. In a large bowl, combine cooked brown rice, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and olives. Drizzle with lemon juice and toss gently.
  5. Divide the rice mixture among bowls and top with cooked turkey. Garnish with extra parsley if desired.
