Eggs
  • 6 large eggs
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper any color
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • cooking spray or oil for greasing the muffin tin

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease the muffin tin with cooking spray or oil.
  3. In a large mixing bowl, whisk the eggs until well combined. Add salt, black pepper, garlic powder, and onion powder, and whisk until smooth.
  4. Stir in the diced ham, shredded cheese, diced bell pepper, and green onions until evenly distributed.
  5. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until set and lightly golden. Check for doneness with a toothpick.
  7. Let the muffins cool for a few minutes before removing them from the tin.
