Chicken
  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger (optional)
  • Salt and pepper to taste
Green Beans
  • 1 pound fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Method
 

  1. Marinate the chicken by combining honey, soy sauce, minced garlic, ground ginger, salt, and pepper in a bowl. Add chicken and coat well. Cover and refrigerate for at least 30 minutes.
  2. Prepare the green beans by washing and trimming them. Optionally blanch in boiling water for a couple of minutes.
  3. Cook the marinated chicken in a skillet over medium-high heat with olive oil for about 6-7 minutes on each side until golden brown and cooked through.
  4. In the same skillet, sauté minced garlic for 30 seconds, then add green beans and sauté for 5-7 minutes until tender yet crisp.
  5. Combine sliced chicken with sautéed green beans, pour remaining marinade, and cook for an additional 2-3 minutes to heat through.
