  • 2 cups cooked pasta (penne or rotini)
  • 1 cup cooked chicken, shredded or diced
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Fresh parsley for garnish (optional)

Method
 

  1. Prepare the chicken by shredding or dicing it into bite-sized pieces. If using raw chicken, cook it in a skillet over medium heat until no longer pink, about 6-8.
  2. Cook the pasta in a large pot of salted water according to package instructions, usually around 8-10. Drain and set aside.
  3. In a large mixing bowl, combine honey, soy sauce, olive oil, black pepper, garlic powder, onion powder, and diced bell peppers. Whisk until well mixed.
  4. Add the cooked pasta and shredded chicken to the sauce. Toss until evenly coated.
  5. Preheat a skillet over medium heat. Add the pasta mixture and cook for about 5-7, stirring occasionally. Sprinkle mozzarella and Parmesan cheese over the top, cover, and cook for another 2-3 until cheese is melted.
  6. Let cool for a minute before serving, garnished with fresh parsley if desired.
