Ingredients
  

Filling
  • 1 pound thinly sliced beef ribeye or sirloin works best
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 medium green bell pepper, sliced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 1 package low-carb tortillas (8 count)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add sliced onion and green bell pepper, sauté until soft (5-7 minutes).
  2. Add thinly sliced beef, season with garlic powder, salt, and pepper. Cook until browned (about 5 minutes). Remove from heat and let cool slightly.
  3. Lay out a low-carb tortilla, spread a generous amount of the cheese mixture (cream cheese, provolone, mozzarella) over it, then add a portion of the beef and vegetable mixture. Roll tightly.
  4. Preheat oven to 375°F. Place rolled tortillas seam-side down on a baking sheet. Bake for 15-20 minutes until golden brown and cheese is melted.
  5. Let cool for a few minutes, then slice into pinwheels and serve warm.
