Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the diced onion for 3-4 minutes until translucent, then add minced garlic and cook for 1 minute.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat, then stir in taco seasoning, diced tomatoes, and tomato sauce. Simmer for 5 minutes.
  4. In a separate bowl, combine ricotta cheese with a pinch of salt and pepper. Mix well.
  5. In a 9x13-inch baking dish, layer the beef mixture, zucchini slices, ricotta mixture, and shredded cheeses. Repeat layers.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  7. Let cool for 10 minutes before slicing and serving. Garnish with fresh cilantro if desired.
