- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté the diced onion for 3-4 minutes until translucent, then add minced garlic and cook for 1 minute.
- Add ground beef to the skillet and cook until browned. Drain excess fat, then stir in taco seasoning, diced tomatoes, and tomato sauce. Simmer for 5 minutes.
- In a separate bowl, combine ricotta cheese with a pinch of salt and pepper. Mix well.
- In a 9x13-inch baking dish, layer the beef mixture, zucchini slices, ricotta mixture, and shredded cheeses. Repeat layers.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Let cool for 10 minutes before slicing and serving. Garnish with fresh cilantro if desired.
