  • 1/2 cup unsalted butter, softened Adds richness.
  • 1 large egg Binds ingredients together.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1/2 cup sugar-free white chocolate chips Provides sweetness.
  • 1/2 cup macadamia nuts, chopped Adds crunch.

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, shredded coconut, erythritol, baking powder, and salt.
  3. In another bowl, cream together softened butter, egg, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet mixture and stir until combined. Fold in white chocolate chips and macadamia nuts.
  5. Scoop tablespoon-sized dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 10-12 minutes until edges are lightly golden. Let cool for 5 minutes before transferring to a wire rack.
