Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt, black pepper, and dried oregano. Heat olive oil in a skillet and cook the chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
Cook the orzo in salted boiling water according to package instructions for 8-10 minutes. Drain and set aside.
Sauté broccoli, bell pepper, and zucchini in the same skillet for 4-5 minutes until tender but crisp. Add minced garlic and cook for an additional minute.
Combine the cooked chicken, orzo, lemon juice, and lemon zest in the skillet. Stir well and heat through for 2-3 minutes.
Stir in chopped parsley before serving.
