  • 2 large lemons For juice and zest
  • 4 cloves fresh garlic, minced
  • 0.25 cup extra virgin olive oil
  • 1 teaspoon salt Adjust to taste
  • 0.5 teaspoon pepper Freshly ground for best flavor
  • fresh herbs (optional) Such as parsley or thyme for garnish

Method
 

  1. Marinate the chicken by placing it in a bowl or resealable bag, adding lemon juice, minced garlic, olive oil, salt, and pepper. Mix well and let it marinate for at least 30 minutes.
  2. Prepare the garlic and lemon mixture by combining remaining lemon juice, minced garlic, and olive oil in a small bowl.
  3. Cook the chicken by grilling, baking, or pan-searing until it reaches an internal temperature of 165°F (75°C), about 6-7 minutes per side.
  4. Let the chicken rest for about 5 minutes before slicing and serving with the garlic and lemon mixture drizzled on top.
