- Wash and dice the bell pepper and onion into small, even pieces.
- Heat olive oil in a large skillet over medium heat. Add thawed hash browns and cook for 5-7 minutes until golden brown and crispy.
- Add diced onion and bell pepper to the skillet and sauté for 3-4 minutes until softened. Stir in cooked sausage, garlic powder, paprika, salt, and pepper, and cook for an additional 2-3 minutes.
- Make small wells in the hash brown mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes until eggs are cooked to your liking.
- Sprinkle shredded cheddar cheese over the top and cover for 2 minutes to melt the cheese.
