  • 2 cups frozen hash browns thawed
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup diced bell pepper any color
  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 2 tablespoons olive oil

Method
 

  1. Wash and dice the bell pepper and onion into small, even pieces.
  2. Heat olive oil in a large skillet over medium heat. Add thawed hash browns and cook for 5-7 minutes until golden brown and crispy.
  3. Add diced onion and bell pepper to the skillet and sauté for 3-4 minutes until softened. Stir in cooked sausage, garlic powder, paprika, salt, and pepper, and cook for an additional 2-3 minutes.
  4. Make small wells in the hash brown mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes until eggs are cooked to your liking.
  5. Sprinkle shredded cheddar cheese over the top and cover for 2 minutes to melt the cheese.
