  • 2 large eggs preferably organic
  • 2 slices whole grain or sourdough bread for a hearty base
  • 1/4 cup feta cheese crumbled
  • 1 cup spinach fresh and washed
  • 1 medium tomato sliced
  • 1/4 cup olives pitted and sliced
  • 1/4 small red onion thinly sliced
  • 1 handful fresh basil or parsley chopped
  • 1 tablespoon olive oil for cooking the eggs
  • to taste salt and pepper for seasoning

Method
 

  1. Wash the spinach, slice the tomato and red onion, and crumble the feta cheese.
  2. Heat olive oil in a skillet over medium heat, crack the eggs into the skillet, and cook to your preference.
  3. Assemble the sandwich by layering spinach, cooked eggs, tomato, olives, red onion, and feta cheese between the slices of bread.
  4. Toast the assembled sandwich in the skillet for 2-3 minutes on each side until golden brown.
  5. Slice the sandwich in half and serve warm.
